Tiramisu Tart

I like tiramisu a lot, but I don't like the idea to eat raw eggs. So I was really happy when I found this recipes from Libelle magazine that there is another way to make tiramisu by baking it.

Ingredients:
5 eggs
200gr sugar
200gr flour, sifted
90gr chocolade sprinkles

60 ml coffee liqeur or strong coffee
250gr mascarpone
100gr sugar powder
100 ml whipped cream
½ tsp vanilla-essence (I didn't use this)
Chocolate sprinkles
Cacaopowder
Directions:
1. Whisk eggs and sugar until raising and fluffy.
2. Add flour gradually and keep whisking.
3. Add chocolate sprinkles in the batter.
4. Pour into cake form diam. 24 cm. Bake for about 50 minutes and temperature 180°C.

Garnishing:
1. Divide cake into 2. Sprinkle with coffee liquer or strong coffee. Let the cake absorb the liquer.
2. Whisk mascarpone, sugar powder, cream and vanilla essence until soft.
3. Put half of mascarpone mixture as filling.
4. The other half is used for side, top and decorations of the cake.
5. As finishing, sprinkle the cake with cacaopowcer or grated chocolate.

Martabak Telur // Eggs In Folded Pastry

Martabak telur, or egg martabak, is an crepe-like dish which mainly comprises vegetables. It also includes chicken or duck egg for the batter - up to six eggs for a large one. Martabak telur is made by spinning pastry until very thin, like filo pastry, then shallow-frying it in a custom made flattened heavy wok. The ingredients are added, then the pastry is wrapped around the ingredients to make a parcel. Usually, it is cut into squares afterwards for consumption. It is often eaten with slices of cucumber, and a dark brown sauce made of vinegar and palm sugar.

Here is a simple way to make martabak for home consumption. For the wrappers I always use ready-made springroll wrappers which you can buy in asian grocery. If there is no asian grocery in your neighbourhood you can also use filo pastry. If you're a vegetarian, you can always remove the meat and replace it with any vegetables you like.

Ingredients:
150 gr minced meat
1/2 onion
2 tsps curry powder
salt & pepper
2 eggs
spring onions, fine sliced
springroll wrappers or filo pastry

Directions:
1. Melt a bit butter on the pan. Stir in chopped onion.
2. Add minced meat, stir until meat colored.
3. Season with pepper, salt and curry powder. Mix together and cook until meat done. Put aside.
4. Whisk eggs then add spring onions and meat curry in. Mix well all together.
5. Get 1 springroll wrapper, put 1 eatspoon mixture of eggs and meat. Fold in as an envelope.
6. Heat oil in the flattened pan, shallow-fry the martabak until golden brown. Serve with acar cumcumber.

Acar Cumcumber
Chillies
Cumcumber, diced
Carrots, diced
1 cup hot water
3 eatsps sugar
1-2 eatsp vinegar
Put cumcumber, carrots and chillies in a bowl. Disolve sugar in hot water. Add vinegar. Pour in vegetables bowl. Refrigerate to cool.

Fried Rice Noodles

Rice noodles are noodles that are made from rice. Their principal ingredients are rice flour and water. However, sometimes other ingredients such as tapioca or corn starch are also added in order to improve the transparency or increase the gelatinous and chewy texture of the noodles.

The most common recipe is fried rice noodles. If I want to cook easy and fast and also satisfying, I will make this. Every person will have different ingredients to make it. But actually the basic ingredients you need are garlic, rice noodles, dark soy sauce/kecap manis, salt & pepper. The rest of ingredients are as additives according to your taste.

Here is my simple version of fried rice noodles recipe:

Ingredients:
200 gr rice noodles, soak in warm water, drained
100 gr minced meat (can be deleted for vegans)
carrots, fine sliced
mushrooms, fine sliced
cabbage, fine sliced
spring onions
celery

2 cloves garlics, chopped
1 tsp salt
1 tsp ground pepper
3 eatsps dark soy sauce or kecap manis

Directions:
1. Heat the wok and pour in the cooking oil.
2. Add garlic, stir fry until fragrant.
3. Add minced meat, stir fry until the meat turning brown.
4. Add carrots, stir fry until carrots half-cooked, then add mushroom and cabbage. Stir fry again.
5. Add some water to make a bit sauce and season with salt and pepper. If you like, add chicken/beef/vegetable broth to give more flavour.
6. Add dark soy sauce or kecap manis, stir fry until everything cooked.
7. Finally add rice noodles, celery and spring onions. Mix thoroughly until noodles covered.

**Tips:
- For vegans you can always remove the meat.
- Minced meat can be replaced with chicken fillet, seafood or eggs.
- Other vegetables can be added/replaced according to your tastes.
- If you like the spicy one, just add a bit sambal or chillies in the fried rice noodles.

Sweet Spicy Manggo Salad

This refreshing salad is a smashing side dish, with an interesting mix of spicy, sweet and sour. Delicious with BBQ's or Asian food. I have to warn you here, we Indonesians, like to eat it really spicy, so if you're not used to spicy food, please reduce the amount of chillies otherwise you'll get stomachache which is really not nice...**believe me, happens to me a lot... :o)

2 manggos, peeled, shredded
1 tblsp or more dark brown sugar or Indonesian gula jawa, melted
5 or less red chillies
1/4 cup fresh lime juice
chopped coriander leafs, as needed
Directions:
Mix in a bowl shredded manggo, melted sugar, chillies and fresh lime juice. Add coriander leafs, stir to coat and refrigerate before serving.
