Beef Curry

I like to make this beef curry and my hubby loves this too. I have this recipe since I got married. At that time my cooking skill was very limited. Everytime I make this, it always reminds me old time when cooking was a daily struggle to me.

Ingredients:
1/2 kg beef
1/2 teasp salt
1/4 teasp black pepper powder
2 eatsps flour
11/2 eatsps curry powder
1/2 onion, roughly chopped
1 garlic, roughly chopped
1 cm ginger, roughly chopped
1/2 lt water
1/2 blok of beef broth

Directions:
1. Mix part of flour with curry powder.
2. Smear beef with mixture of curry powder, salt & pepper. Put a side.
3. Heat the oil, stir fry the beef until changing colour. Remove from the pan, put a side.
4. Stir fry onion, garlic and ginger.
5. Add leftover flour and curry mixture. Mix thoroughly.
6. Add water and beef broth, then add beef.
7. Simmer until the beef is soft and the liquid becomes thick.

Spicy Chicken Balls

This is an easy snack when you have unexpected friends visiting you. Or if you have party at home and children will love it too. You just have to remove the chillies. Surely, it's always a bless if you got people coming to visit you, because most of the time they bring joys or could also bring a fortune. Nobody knows.

Ingredients:
250 gr chopped-chicken
2 garlics, crushed
1 sereh, fine-chopped
1 red chilli
1 spring onion, fine-chopped
1 eetspoon brown sugar
1 eetspoon fish sauce (nam pla~thais sauce or oyster sauce)
1 egg, loose-whisked
salt & black peper

Sauce: Mix together
50 cl rice-vinegar (or substitute wih 50 cl hot water + 1-2 eetspoon vinegar)
2 red spanish peper, fine sliced
1 eetspoon fish sauce
1 spring onion, fine-chopped
1 eetspoon brown sugar

Directions:
1. Mix all the ingredients for the balls.
2. Make a chicken ball from 1-2 eetspoon mixture.
3. Put the balls in the fridge for about 1/2 hour so they become firm.
4. Fry in the hot oil until golden brown.
5. Serve the chicken balls warm with the sauce.

Martha Stewart Chocolate Cupcakes

After drooling seeing these cupcakes from the TV, I'm really curious to bake it myself. And the results, it's not difficult at all and it works very well... no failure!
For the frosting I just use confectioner sugar glaze (icing), add with few drops colouring... voila, as yummie as it looks.

Ingredients:
3/4 cup unsweetened cocoa powder
1 1/2 cups all-purpose flour
1 1/2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
2 large eggs
3/4 cup warm water
3/4 cup buttermilk (substitute with milk)
3 tablespoons vegetable oil
1 teaspoon pure vanilla extract (substitute with vanilla sugar)
Directions:
1. Preheat oven to 180°C. Line cupcake pans with liners; set aside.
2. In a large mixing bowl, sift together cocoa, flour, sugar, baking soda, baking powder, and salt.
3. Add the eggs, warm water, buttermilk, oil, and vanilla; mix batter until smooth, about 3 minutes. Scrape down the sides and bottom of bowl to assure batter is well mixed.
4. Divide batter evenly among liners, filling each about one-third full. Bake until tops spring back when touched, about 20 minutes, rotating pan once if needed. Transfer to a wire rack; let cool completely.
